Bell peppers are highly nutritious vegetables that are rich in Vitamin C and anti-oxidants, which are often left out of most people’s menu, a dietician, Mrs Rose Bako, has said.
According to Bako, who made this known in an interview with the News Agency of Nigeria, NAN, on Sunday in Jos, bell peppers have high Vitamin C content, which aid the body absorb iron and heal wounds fast.
She also said that vitamin C could also boost the level of collagen in the body, support the skin and joints, and also help in maintaining a healthy immune system.

According to her, apart from being rich in vitamin C, it is also a good source of folate and vitamin B6, which also helps in cleaning and keeping the blood vessels healthy.
The dietician also said that bell pepper was an excellent source of vitamin K, which was key in the formation of blood clot.
She said that bell pepper was also rich in antioxidants and anti-inflammatory properties, which were also important in fighting free radicals that often caused cancers.
Bako said that bell pepper had a high fibre content, which was vital for digestion, and could also reduce the risk of constipation.
“Bell peppers are high in fiber and low in calories, which helps regulate the body weight and maintain a healthy digestive tract,” she said.
The dietician explained that bell peppers, which were mainly green, yellow and red in colour, and a source of carotenoid, helped in maintaining healthy eyes.
Bako advised people 40 and above, and who were interested in living a healthy lifestyle, to include healthy vegetables and foods, such as bell peppers, into their diets.
